First write the story/book.
Second buy and read Diana Wynne Jones' book "The Tough Guide to Fantasyland"
Third now see how many fantasy conventions you've followed

• Map
• Colour coding
• Food
• Animals
• Various types of races/species met

I'd read the book before writing a second fantasy novel so every time my poor characters ate stew - I laughed.
